Chicken Malai Tikka (Oven Baked)

Off late, I have been trying to come up with healthier recipes which are delicious to eat and gorgeous to serve at parties as well. All thanks to my dear husband who is becoming more health conscious (“freak”) with every passing day. But it is a great challenge for me too as most of us today struggle to eat healthy. So, every time i successfully eliminate oil, deep frying, cheese etc. from my dishes, it’s party time !!

While I have made chicken tikka before as well,  this recipe is way healthier as I used chicken breasts which is high on protein and the recipe has zero oil. I have already made this dish thrice and it always leaves people wanting more. It is the closest experience you get to the actual tandoori tikkas. The charred outside crispy skin and the juicy, creamy inside is a perfect tikka.

Ingredients (Serves 4-6)

  1. Boneless chicken (chicken breasts for high protein) cut into small cubes – 500 gms
  2. Hung Curd – 3 tbsp (helps in getting a thicker marinade which sticks to the tikka)
  3. Fresh Cream – 3 tbsp
  4. Garam Masala – 1 tsp
  5. Ginger Garlic Paste – 1tbsp
  6. Kashmiri Lal Mirch – 2 tsp (optional, used to add color to the tikkas)
  7. Salt to taste

Method:

  1. In a bowl, mix all of the above mentioned ingredients together and keep in the fridge for at least 4 hours or overnight. While the curd helps in making the chicken tender, the cream adds the rich creaminess to the tikka and is a great way to skip using oil in the recipe. (Note: Use of red food color is quite common but I have replaced it with kashmiri lal mirch which adds color without increasing the heat of the recipe.)
  2. Preheat the oven at high temperature for 5 -7 minutes.
  3. Take the chicken out of the marinade and arrange the cubes in the skewers ensuring there is a little space between each cube. This prevents the chicken from being raw from in between.
  4. Place the skewers on the grill and bake it in the oven (I used OTG) for 12-15 minutes. Be very careful to not overcook as it would make the chicken dry. (I prefer checking the chicken once after 10 minutes). Sprinkle a little chat masala (optional) over the tikkas once ready.
  5. Serve hot with lemon wedges, green chutney and onion rings !DSC01600
