Dhania Ki Chutney – 4 ways

DSC00183.JPGGreen Chutney can be customized in so many ways to serve so many needs. Need it as a dip for tandoori appetizers? Curd and coriander chutney goes amazingly well! Khatta aam dhania pudina chutney is an amazing match for all the Indian Chats from aaloo tikki to pani puri. Whereas, the year round options and ingredients are coriander with lemon or tomato.

There are n number of ways you can make a green chutney, but the logic remains the same – pick one herb, one souring element, one spicy element and flavors as you like. Using the below listed ingredients, you can use your own permutations and combinations and customize your own Green Chutney.

However, I have also shared 4 common recipes I use in my day to day menu.

Elements for a green chutney:

1. Herbs

  1. Coriander Leaves / Cilantro/ dhania
  2. Mint Leaves / pudina

2. For the Sourness

  1. Lemon Juice
  2. Imli / Tamarind pulp
  3. Tomato pulp
  4. Raw Mango pulp
  5. Curd (Smooth)
  6. Amla / Indian Gooseberry

3. Extra Flavors

  1. Garlic (goes well with lemon and green chilly)
  2. Ginger (goes well with tomato or amla)

4. Dash of Spices

  1. Red Chili Powder / Green Chilli
  2. Chaat Masala
  3. Aamchur / Raw Mango Powder for extra tanginess)

 

Recipe for Green Chutney 4 ways:

1. The Grand-mother recipe

  1. Coriander Leaves – 100 gms
  2. Lemon – 1
  3. Garlic Cloves – 4
  4. Green Chilly – 1
  5. Mustard Oil – 1 tsp
  6. Salt – as per taste

Grind all the ingredients together get a smooth paste with a little water.

2. The Tandoori Tikka Recipe

  1. Coriander Leaves – 100 gms
  2. Curd (pass it through a sieve before grinding) – 4 to 5 tbsp fr desired consistency
  3. Red Chilly powder – 1 tsp or
  4. Green Chilly – 1
  5. Salt – as per taste

Grind all the ingredients together get a smooth paste.

3. The Indian Chat Recipe

  1. Coriander Leaves – 100 gms
  2. Raw Mango pulp – 2 tbsp
  3. Red Chilly Powder – 1 tsp
  4. Salt – as per taste

Grind all the ingredients together get a smooth paste with a little water if required.

4. The Tomato Tango Recipe

  1. Coriander Leaves – 100 gms
  2. Tomato – 1
  3. Ginger – 1/2 inch
  4. Green Chilly – 1
  5. Aamchur powder/ Chaat masala – 1 tsp (optional)
  6. Salt – as per taste

Grind all the ingredients together get a smooth paste with a little water if required.

Tip: Grind a cube or two of ice with your chutney to make it look greener for a longer time.
