This recipe is no rocket science. In fact this is one of the easiest ways to add some color to your Holi menu. What do you think? This is just an update of the regular Cumin rice or veg pulav. Give your menu a little twist with this colorful rice dish. It is delicious when served with a curry or raita. You can also add some biryani masala powder along with some tomatoes and turn it into a single pot meal.
Ingredients (Serves 7-8)
- Rice – 3 cup
- Bell Pepper Red diced – 1
- Bell Pepper Yellow diced – 1
- Green Capsicum – 1
- Onions chopped – 3
- Curry Leaves dried and powdered – 2 tbsp
- Ginger- 1 inch
- Refined oil – 2 tbsp
- Black Pepper – 2 tsp
- Salt to taste
Step 1: Steam the rice and keep it aside to cool.
Step 2: Heat oil in a pan and add the onions followed by curry leaves powder and ginger. Saute till translucent and then add the capsicum and bell peppers. Cook covered for 2-3 minutes or until soft.
Step 3: Add rice and saute for a couple of minutes. Mix the salt and pepper and serve hot.
