This slice is a true sense of happiness when it just melts in your mouth. My mom used to make these when I was a kid. I remember a time when I demanded for a cake which had a house built on top. I have a very faint memory but I think it was inspired by a Disney cake 😉 That cake decades back was a challenge to find in any bakery and my mom clearly did not master the art of frosting. But she did make a cake with a house on the top. A house of baked bread sandwiches and a sandwich triangle on top. Biscuits for the door and polo loops for the windows. It even had a lolly-pop chimney 😀 I was so excited that I would not eat the cake but just the”house”. Those good old days! This recipe definitely helps me relive those and I would love to share the same with all my great friends here. Hope you feel the joy the same way as I do!
- All purpose flour – 1.25 cups
- Egg – 2
- Sugar – 1 cup
- milk – 1/2 cup
- Butter – 5 cubes
- baking powder – 1/2 teaspoon
- baking soda – 1/2 teaspoon
- Vanilla Essence – 1/2 teaspoon
Step 1: Powder the sugar and sift it in a bowl. Add to it sifted flour, baking powder and baking soda.
Step 2: In another bowl, take 2 full eggs and beat them at medium speed for about 4 minutes. The eggs become very light and frothy.
Step 3: Warm the milk and put the butter into it.
Step 4: Add the flour mixture in parts to the beaten egg and mix. You can use the whipper to mix at the lowest speed.
Step 5: Add the milk butter mixture and mix. Add vanilla essence and mix.
Step 6: Grease the cake tin with butter or ghee. Do not dust it with flour if baking in microwave as it prevents the cake from rising.
Step 7: Bake them in the microwave for 23-25 minutes at 160 degrees. The hot milk sponge cake is ready. Serve it with a cup of evening tea.
Tip:You can make any flavor cake using the same recipe. Instead of vanilla, add the desired flavor essence and color if needed.
