My work demands traveling across cities and at times I am out for weeks! While I thought he would be happy to have some personal time off, he seemed to quite disappointed when I had to leave last Thursday. “You would be gone for almost a week?”, he asked. I’ll be honest, I was pleased that he wasn’t indifferent! I gave him a quick peck on the cheek and pulled on the apron. I had to make him something sweet and I took the old school route. Gajar ka Halwa is a delicacy we both relish !
- Carrots grated- 10 (1/2 kg)
- Ghee – 3-4 tbsp
- Milk (full cream) – 2 cups
- Cardamom powder – 1/4 tsp
- Khoya – 1 cup
- Sugar – 1/2 cup
- Cashew nuts and raisins for garnish
Step 1: Heat ghee and add the grated carrots and sauté for 5 minutes.
Step 2: Add milk, cardamom powder and cook till carrots are soft. Then add the crushed khoya (if you don’t have khoya you can alternatively use 2 tbsp of milk powder – that’s what I do most of the times) and sugar, cook till sugar melts.
Step 3: Garnish with cashew nuts (roasted full or sliced) and raisins. Serve hot.
