Macaroni with Cheese and Herb Pie

This is an Italian main course recipe which combines the freshness of herbs and the smoothness of cheese and macaroni in a shortcut pastry pie. You can either make one large pie or many smaller ones which are easier to serve in a party.

Ingredients (Yields 10)

For the shortcut pastry pie:

  1. All purpose flour – 1 cup
  2. Butter – 60 gms
  3. Cold Water – 2 tbsps

For the filling:

  1. Macaroni half boiled- 1 cup
  2. Mint leaves chopped – 2 tbsps
  3. Corriander leaves chopped – 2 tbsps
  4. Spring Onion chopped – 2 tbsps
  5. Garlic Cloves chopped – 5
  6. Olive oil – 1 tablespoon
  7. White Sauce (2 tbsp flour, 2 tbsp butter and 1/2 – 1 cup milk for desired consistency)
  8. Processed Cheese grated for topping

Recipe:

Step 1: For the pastry dough, take the flour and butter in a food processor or blender and mix till you get a grainy texture. Add water in drops so that the dough starts to hold as in the picture below.

Step 2: Knead the dough and wrap it in a plastic wrap and refrigerate at least for one hour.

Step 3: Half boil the macaroni and keep it aside. Chop the herbs and garlic. Add 1 tablespoon of olive oil in a pan and add cloves, herbs and saute for a minute. Add the macaroni to it and season with pepper, salt and red chili flakes. Cook for 2 minutes and turn off the gas.

Step 4: Take out the dough and knead it again. Roll it out with the help of rolling pin. Put it over the pastry mould and cut over the extras. With the help of a fork pierce it a little and keep it in the refrigerator for 10 minutes.

Step 5: Meanwhile for the white sauce, add butter in the pan and let it melt. Then add the flour and mix till it forms a paste. Add milk slowly and mix to get the desired consistency.

Step 6: Take the pastry crust and bake it for 10 minutes (i baked it in a microwave at 160 degrees on convection mode). Once done fill it with the macaroni topped with some white sauce and finally some grated cheese.Bake it for another 30- 40 minutes at the same temperature (it should get a golden crust on the top). IMG_20151122_220019

Step 7: Let it cool for 10 minutes before taking it out from the mould.
